Beer Battered Fish
- 1 box Ziti
- 2 Qt H20
- 1 stick butter
- 1/2c flour
- 3 Tbsp Garlic pow.
-3 Tbsp onion pow.
-1 tsp cayenne
-1 tsp oregano
-1 tsp wht. pepper
-1 Qt Half and half
-2 c of preferred cheese
Bring water to a boil and cook pasta for 10 minutes.
Bring half and half to a steam, add half of each spice to cream.
On Low heat, melt butter until foam is gone, do not brown. Add flour gradually and whisk until clumps are gone. Set roux aside.
Add roux to warm cream gradually until it begins to thicken. Once thick, begin to add cheese gradually until reached desired consistency. Reserve 1/2 cup for next step.
Once cheese sauwce is complete, add to warm pasta and begin to mix. Fold in remaining cheese as you mix for extra pull!
Once mixed, put in a cast iron pan and dust the top with parmesan and breadcrumbs.
Pop into the oven on broil for 10 minutes.
